|50 ml||PLYMOUTH GIN|
|20 ml||FRESH LEMON JUICE|
|15 ml||HOMEMADE RASPBERRY SYRUP*|
|10 ml||DRY VERMOUTH|
|25 ml||EGG WHITE|
Dry shake, then shake hard with cubed ice.
Double strain into a chilled cocktail glass and garnish with a fresh raspberry.
Despite hailing from a well respected Gentleman’s Club many moons ago, this drink has a manly pink hue. It shouldn’t put you off though, it’s a beautifully balanced drink and a real one to show off why egg white is an important part of your arsenal. I prefer a softer gin for this, but again make it with what works for you. As with the way I like my Manhattan, a splash of dry vermouth helps stop the drink being too cloying.
